Observation (CORRECTED DURING INSPECTION): Prep cooler measrued 9 degrees C (above) and 7 degrees C (below). Note: Lowest temperatures achieved. Internal food temperatures: Approx. 9 to 10 degrees C.
Corrective Action(s): Higher-risk items (e.g. deli meats) discarded. Items to be used or discarded within 4 hours max. Ensure prep cooler is capable of maintaining potentially hazardous foods at temperatures of 4 degrees C or less to effectively limit growth of potential pathogens. In the interim, small amounts of food may be kept in inserts (upper portion) provided that food is used or discarded within a maximum of 4 hrs. Do not store food items in main (lower) compartment of cooler.

Observation (CORRECTED DURING INSPECTION): One red bucket labeled "sanitizer" had no detectable quats. Note: Other red buckets and cups tested at 200 ppm quats.
Corrective Action(s): Contents of bucket were emptied and bucket was refilled with sanitizer (tested at 200 ppm quats). Ensure that at all times, sanitizer is maintained at concentrations required for effective santiizing of food contact surfaces (e.g. 200 ppm quats or as per manufacturer specification).
