Storage Temperatures
o Cold holding Coolers are below 4C; Cold holding Freezers are below -18C
o Hot holding food items are at 60C or higher - low simmer on stove
Food Processing and Food Protection
o Specialized Food Processing
- Bamboo wraps, traditional food item - steamed for >8hrs. Finished product is cooled and kept in freezer until order
o Approved Food Source - Operator keeps receipts of food ingredients from an approved source (2 Sisters Poultry supplies all meats, no lamb, reviewed receipts)
o Food Storage - Food is mostly stored in covered containers.
-Raw meats are stored on the lowest shelf
-Freezer, upright - some open bags, broken plastic, could use some reorganization, covering of foods.
Maintenance and Sanitation
o Dishwasher - 50-100ppm Chlorine sanitizer
o Storage of chemicals is separate and away from food; bleach available on site
o Pest control - there are no signs of pests at the time of inspection.
-Some loose foam and bite marks around a hole in mop sink room. No droppings in kitchen or sink room. Seal and monitor.
-Maintenance, cleaning and organization have improved.
Administration
o Valid operating permit is posted in public view
o Staff is certified in food safety (December 2024 renewal date) |
