Observation: 1. Inside of the ice machine requires cleaning and sanitizing. Water pool and minor mould build up noted. Sides soiled.
2. Food debris build-up under the cutting board on prep cooler.
Corrective Action(s): Required operator to clean and sanitize all noted areas. Ensure to add these areas to sanitation plan and conduct regular cleaning.

Overall sanitation okay; slight clutter noted in the back storage area. Please ensure to re-organize to area to facilitate easier cleaning.

Discussed induction plates beside orange juicer; operator plans to install a fume-hood as per fire department's requirement. Information provided to operator to provide a letter from fire department approval the set-up.
