Observation:
The low temperature dishwasher had empty soap and rinse aid containers. The [Cl2] was 0ppm. The chemical dispensing tubes were not in the correct chemicals. Dishes were not not being washed and sanitized properly. Bacteria and germs can be spread.
Corrective Action(s):
Immediately stop using the dishwasher and wash all dishes manually using the 3-compartment method. Sanitize using a solution of hot water and bleach (2 Tbsp of bleach to 4L water). Call your chemical supplier to replenish the soap and rinse aid agents. Ensure the [Cl2] of the dishwasher, during the rinse cycle is 50-100ppm strong. Purchase chlorine test strips and Quats test strips to monitor the dishwasher daily.
During the inspection, the owner called the chemical supplier.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -16C or colder; thermometers present; and temperatures recorded daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in spray bottles had [Cl2] of 200ppm.
- Quats sanitizer had 200ppm strength.
- All foods stored in food grade containers; covered; labeled; date coded; all foods stored in groups; and all foods stored 6" off the floor on racks or shelves.
- General sanitation level is good.
- No signs of pests. Professional pest company monitors facility for pests.
- No expired foods in use of for sale. FIFO rules being followed.

**A follow-up inspection to be conducted next week to ensure the dishwasher chemical levels are correct.**
