Observation (CORRECTED DURING INSPECTION): Bags of ham and slices of cheese in the sandwich prep cooler noted at 7 - 10 deg. C internally.
Corrective Action(s): Operator discarded food items in the infraction as per their food safety plan.

Observation (CORRECTED DURING INSPECTION): This is a repeated infraction. Potentially hazardous foods in the Alto Shaam hot holding unit noted at 57 deg. C ~ 58 deg. C internally. Operator reported that the staffs forgot to put away cooked foods to the hot holding unit right away.
Corrective Action(s): Potentially hazardous food items in the hot holding unit discarded as per food safety plan. Ensure cooked foods are transferred to hot holding units as soon as possible.

Observation: Dry goods (eg. flour) were dispensed using scoops without a handle (cups, plastic container, etc.)
Corrective Action(s): Supply food grade scoop with a handle. Store scoops outside of the food or in the food but handle sticking out. Hand to food contamination is a concern here.

Observation: This is a repeated infraction. Rodent droppings noted in the following areas:
-behind the hot water tank
-around CO2 tanks
-under the bar counter
-behind ice machine/bread storage
-under the stove
Corrective Action(s): remove the droppings noted in the infraction. Clean and sanitize effected area with QUATS (200 ppm) or bleach (100 ppm) solution to deactivate bacteria, viruse and for pheromone which may attract more rodents.

Observation: 1) standing water noted from the mop sink towards a drink syrup rack.
2) Food debris building up noted under the cook line.
Corrective Action(s): 1) Remove the standing water noted in the infraction. Clean up any spills as soon as possible.
2) Clean and sanitize hard to reach areas under the cook line. Sanitation must be improved to discourage pest activities.

Observation: 1) Walk-in cooler's air temperature at the beginning of the inspection noted at 7 deg. C. Large amount of goods noted on top of the walk-in cooler unit. Walk-in cooler may have gone through a defrost cycle as a fan noise was very loud. Temperature went down to 4 deg. C.
2) Sandwich cooler in the sandwich bar noted at 10 deg. C. Operator reported that this cooler had a temperature problem before.
Corrective Action(s): 1) Remove items stored on top of the unit to facilitate air flow to unit. Consult with a technician if we can change the defrost cycle to non-busy hours.
2) Get the cooler serviced to maintain foods at to below 4 deg .C at all time.
