- No production done in this building. Only drying, slicing, repackaging and storage of product.
- Gap noted under exterior door leading out from electrical room, however door between electrical room and food areas did have an adequate seal. Install additional weather stripping under exterior door to completely seal up gap and prevent pest entry and possible harborage inside electrical room.
General observations:
√ Coolers ≤4°C, Freezers ≤ -18°C
√ Facility is HACCP certified
√ Food up off floor ≥6”, all product labelled for identification, best before dates and trace back, good stock rotation noted
√ Hand wash stations fully stocked with hot and cold running water, liquid soap and paper towel
√ Esan sanitizer used for sanitizing equipment, final concentration of sanitizer monitored by third party
√ Three compartment sink stocked with soap and sanitizers
√ Equipment appeared to be in good working order
√ General sanitation and maintenance is excellent
√ No signs of pest infestation noted
√ Thermometers present
√ Temperature logs maintained and no issues with equipment have been noted
