Observation (CORRECTED DURING INSPECTION): Cake rings were stored in the mop sink and large mixing bowls were stored on the ground beside the mop bucket. Also noted splashing from hand sink on food equipment stored on drying rack of three compartment sink. Discussed issues with operator at time of inspection.
Corrective Action(s): Do not store food equipment in or around the mop sink or on the ground. Operator to obtain a table to organize equipment on 'dirty' side of three compartment sink to ensure they stay off the ground and away from the mop sink. Operator to also install a splash guard to protect drying equipment from potential splashing from the hand sink. To be completed within two weeks.

Observation (CORRECTED DURING INSPECTION): Noted bowls in the hand sink beside three compartment sink set up.
Corrective Action(s): Do not obstruct/block hand sinks. Hand wash stations are to be used for hand washing only.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Noted one tray of sugar cookies and one tray of gingerbread cookies stored on top of the display case units uncovered. Staff member was instructed to cover cookies at time of inspection.
Corrective Action(s): Ensure all foods are protected from contamination at all times.

Comments

- Hand wash stations were fully equipped with hot/cold running water, soap and paper towel. See violation code 401 re: obstruction.
- All coolers 4C or less (display case cooler unit, sliding two door cooler unit, cake cooler unit, walk in cooler unit...etc)
- Walk in freezer - 21C
- General sanitation satisfactory.
- No obvious sign of pest activity noted at time of inspection.
- Back door was closed at time of inspection.
- Sleeves for lights have been installed
- Chlorine sanitizer in spray bottle 100ppm
- Manual ware washing procedures reviewed at time of inspection. Ensure food equipment is washed with soap and water, then rinsed with clean water, then sanitized in 100ppm chlorine sanitizer solution for two minutes, then air dried.
- Chlorine test strips, bleach and 3 drain plugs available.
