Observation: Rodent droppings observed behind sliding door cooler on top of heat vent.
Corrective Action(s): Clean up droppings and sanitize this area. Inspect facility for droppings daily.
Ensure pest control services are in place and traps are set up as part of integrated pest management.
Sanitize all surfacers prior to using.

Observation: Grease observed on sides of the wall beside the stove and oven. Dirt and debris behind stove and oven, and along the walls in the storage room and along the wall behind cooler and freezer in kitchen. Wall along the chest freezer in kitchen dirty from old spills. Walls along counters are sticky.
Corrective Action(s): All surfaces must be visibly clean and free of dirt and debris. Correct by September 29, 2022.

Note: All surfaces (walls, floors and counters) must be smooth, easy to clean and non absorbent.

Routine Inspection

Both sliding door coolers at 4 C or below.
Mini freezer at -18 C.
Chest freezer by cooler at -14 C.
Chest freezer in storage area -13 C.
Freezers must be -18 C or below.

Hot holding units being preheated at the time of inspection.

2 compartment sink equipped with hot and cold running water, liquid soap and single use towels.
During the inspection, the one compartment was filled with soapy water and second compartment was filled with bleach for manual dishwashing. Bleach registered between 100-200 ppm.
When dishwashing is set up, it is not possible to wash hands. Obtain a bucket/container and place beside the sink and use that for bleach solution. Until then, wash dishes at the end of the shift.
Keep one compartment available for washing hands at all times.
Correct immediately.

Quats at 200 ppm available for surface sanitizing. Cloth stored in solution.

Reminder: do not keep potentially hazardous foods at room temperature. When ingredients are not being used, place them back into the cooler.
