Observation (CORRECTED DURING INSPECTION): REPEAT OBSERVATION: chicken strips found to be held <60C. Products probed to have internal temperature of 45C.
Corrective Action(s): Products discarded. Ensure that all hot potentially hazardous foods are maintained >60 C at all times.

Observation (CORRECTED DURING INSPECTION): REPEAT OBSERVATION: Supervisor unable to demonstrate proper manual warewashing procedures; stated dishware is rinsed, washed, and sanitized. Supervisor only able to identify 1 sink plug.
Corrective Action(s): Ensure that all dishware is washed, rinsed, and sanitized. The first and third compartment must be filled with hot soapy water and sanitizer solution, respectively.

-Outside storage area has piled up flattened cardboard as well as equipment not required for operations. This is contributing to outside rodent activity.
-Grease trap requires servicing
Corrective Action(s): Remove all excessive equipment and ensure that all flattened cardboard is discarded into dedicated bins. Organize the back area.

=BOH and FOH handwash stations stocked with liquid soap, paper towels, and hot/cold running water
=Walk-in cooler (4C), undercounter cooler (4C) and sandwich cooler (3C) measured < 4 degrees C. BOH upright cooler not able to hold temp however is only being used to store non potentially hazardous foods (bread). do not use this cooler to store potentially hazardous foods until it is repaired or replaced.
=Upright freezer (-12C) and walk-in freezer (-22C) measured < -18 degrees C
=Soup hot holding (87C), shredded steak (65C) and chicken filet (78C) measured > 60 degrees C
=3 compartment sink with sink plugs available for manual dishwashing. Operator found 2 other sink plugs during inspection
=Wiping cloths stored in sanitizer solution at 200 ppm QUATS
=General food storage practices good at the time of inspection. Foods properly stored off the floor and covered.
=No evidence of pest activity noted at the time of inspection
=Staff hygiene was satisfactory at the time of inspection
