Sandwich coolers require cleaning due to heavy food spillage build up.
Knife rack holders require cleaning. Holders must be cleaned frequenlty due to their locations
Corrective Action(s): Underside of all shelving directly above food preparation surfaces MUST be cleaned and sanitized DAILY.
Recommend installing magnetic holders situated well above food preparation surfaces so that they are not easily contaminated.

Observation: All ceiling return vents and adjacent ceiling tiles require cleaning due to heavy dust build up
All wire rack shelving throught the kitchen/walknin coolers require cleaning due to food product build up.
Grease diffusers in exhaust canopy require cleaning
Top side of ice machine requires cleaning due to mould build up
Wall surfaces in dishwashing area require cleaning

Observation: Remove all milk crates currenlty being used for shelving inside the walk in cooler as these are not suitable for shelving.

Replace damaged fluorescent shatter shield
