Observation (CORRECTED DURING INSPECTION): Multiple infractions for improper cooling:

-4 large containers of cooling pork belly cuts at 45 deg C in walk-in cooler -operator indicates it was cooked less then 30 minutes ago.

-1 container of beef soup at 47 deg C in Walk-in cooler -operator indicates it was cooked less then 30 minute ago.
Corrective Action(s): YOU MUST COOL FOODS FAST:

Step 1: 60 deg C to 20 deg C within 2 hours
for solids use wide shallow pans in your speed rack
for liquids use ice baths and/or ice wands

Step 2: 20 deg C to 4 deg C within 4 hours
transfer back into fridge

Observation (CORRECTED DURING INSPECTION): Reused wiping towels left on kitchen counters when not in use.
Corrective Action(s): Leave your rinsed towels in sanitizer bucket maintained at >100ppm chlorine residual

Obtain Chlorine Test Strips to monitor the concentration of these solutions throughout the day.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): -Employee washroom has no paper towels dispensed. Toilet paper not dispense -just a bare roll.

-Handicapped washroom dryer is not working.

-Kitchen handsink next to washer blocked off with foods and hose was attached to it thatextends past the fill-line of sink compartment
Corrective Action(s): -Re-fill paper towels in employee washroom and place toilet paper in dispenser -do not leave any bare rolls out.

-Turn power on for dryer in handicapped washroom

-Keep handsinks clear for handwashing only. Do not attach hoses to utility sinks unless there is a vacuum breaker.

Observation: Back hallway again has mop sink all boarded up and goods stored directly on the floor -this was observed in the previous inspection
Corrective Action(s): Organize all goods on multi-level shelves with the lowest level >15cm off the floor

Operator MUST be utilizing the mop sink for cleaning and refilling mop water
