Observation (CORRECTED DURING INSPECTION): Milk and cheese were stored at 10C inside the improperly working upright cooler in the front of the kitchen.
Corrective Action(s): The operator moved the cold potentially hazardous food items to a working cooler at < or = 4C.

Observation (CORRECTED DURING INSPECTION): 1) Small cutting boards were stored inside the handwashing sink in the back kitchen.
2) Metal tong was stored in the handwashing sink in the front kitchen.
Corrective Action(s): Move all items, equipment, and utensil from the handwashing sinks. Handwashing stations are designated for handwashing only.

Observation: Raw meats stored on top shelves above cooked meats that are uncovered inside the upright cooler.
Corrective Action(s): Store all raw meats on the bottom shelves below cooked meats to prevent raw meat juices from contaminating cooked meats. Cover all food items with plastic wrap or proper lids.

Observation: Temperature log was not kept up to date (ie last logged on July 20th, 2017).
Corrective Action(s): Temperature log for all coolers and freezers must be kept up to date.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: The front upright cooler was measured at 10C at the time of the inspection. The operator stated that they do not store food items inside this cooler overnight.
Corrective Action(s): Service the cooler and ensure it maintains temperature < or = 4C at all times. The operator stated that they may be replacing the unit with a new one. In the meantime, do not store any cold potentially hazardous food items inside the cooler.

- General sanitation is good.
- All handwashing stations stocked with cold/hot running water, soap, and paper towels.
- All coolers (prep, upright) < or = to 4C.
- All freezers (chest, upright) < or = to -18C.
- Most food items are stored in plastic insert containers with lids.
- All hot holding units > or = 60C.
- Low temperature dishwasher dispensed 50 ppm chlorine sanitizer at > 50C at the plate's level. Obtain chlorine test strips from your supplier to monitor the sanitizer concentration daily (ie. before opening). The min chlorine concentration is 50 ppm at 24C at the plate's level. Begin checking daily.
- Surface sanitizer available in spray bottles at 200 ppm QUAT solution. Ensure to provide surface sanitizer at each station (ie. main kitchen, serving area, bar) at all times to clean and sanitize any food contact surfaces.
- Dry storage area is satisfactory. Dry food items stored in carts with proper lids.
- No signs of pest activity.
- FOODSAFE certified staff on duty. Certificates available on site for verification.
