Observation (CORRECTED DURING INSPECTION): No food-contact surface sanitizer was readily available for use at time of inspection.
Corrective Action(s): Staff prepared bleach sanitizer solution in sanitizer pail at 200 ppm (chlorine residual). Ensure sanitizer solution is always available for use during all hours of operation. Mix 1/2 tsp bleach to 1 litre water, changing the solution frequently throughout the day. Also ensure to store any wiping rags in the solution in between uses.

Comments

- Hand sinks were properly supplied with hot and cold running water, liquid soap, and paper towels.
- Three-compartment sink available for manual warewashing maintained in sanitary conditions. Sink drain plugs available for use.
- All coolers were measured at 4C or colder.
- Freezers were measured at -18C or colder.
- General sanitation satisfactory at time of inspection.
- Meat processing equipment maintained in sanitary conditions. Ensure to disassemble and thoroughly wash and sanitize all parts of meat processing/cutting equipment at least every 4 hours.
- All equipment maintained in good conditions.
- Food storage practices satisfactory
- Dry storage areas satisfactory
- No signs of pest activity noted at time of inspection

- Discussed thawing procedures - OK. Reminder that no food items are to be thawing out at room temperature.
- Still no hot-holding or cooked food items at this time. Operator will want to start offering cooked food items again in the future.

Note: Operator has installed a new rational/combi oven to replace old oven. Reminder to submit updated Food Safety Plans to Fraser Health for review and approval prior to offering cooked food items again.
