Inspection - Business name change to Trucking BBQ. Premise is sanitary. No signs of pests at the time of inspection. Hot and cold water available. Hand sinks in use with liquid soap, paper towels and running water. Food protected from contamination with food grade covers and lids. Utensils, condiments and single use items are sanitary. Staff demonstrated good personal hygiene. 200 ppm quat sanitizer in spray bottle in use. Dishwasher final rinse at 50 ppm to 100 ppm chlorine at the plate. Ensure to have chemical test strips for daily monitoring of the dishwasher. Chemical storage adequate. Equipment in good working order. Washrooms are sanitary with fully stocked hand sinks. Covid safety plan on site for review and in use. Kitchen has 4 staff working in close proximity. PPE in use and physical barriers in place. Ensure social distancing is in place for dining area with additional markers and spacing of tables; remove dining chairs near front entrance. Replace shared paper towel rolls with single use paper towels per customer use. Holding units: All (3) hot holding units above 60C. Front service coolers at 4C or below. Stand up freezer at -19C. Walk in cooler at 3.7C. Facility in compliance. Required for name change of business: 1. Permit replacement form filled out with permit fee, $30. 2.
