Observation (CORRECTED DURING INSPECTION): Sliced beef steaks and chicken breasts stored in hot-holding unit had internal temperature ranging in between 56-58'C. Top surface temperature ~ 54'C. Staff had advised both were out of the oven less than 1 hour prior to the inspection, but left on counter longer than usual before placed in the unit. All taken back to the oven for reheating.
Corrective Action(s): Ensure to cook until the internal temperature is >74'C and stored in hot-holding unit >60'C at all times. If for any reason, the temperature drops below the minimum hot-holding temperature of 60'C, food must be reheated until the internal temperature is at 74'C at minimum, and then hot-held at 60'C.

Comments

Routine inspection conducted after facility's minor renovation in kitchen. Two new ovens installed. No other layout change.

-Handwash stations adequately supplied throughout.
-Refrigeration temperatures within requirement; hot-holding temperatures within requirement, other than mentioned above.
NOTE: Continue to have the lids closed when not in use to better maintain temperature.
-Temperature monitoring system in place. No recent issues observed.
-Stirrers stored in ice. Scoop stored in proper manner. Ice machine satisfactory.
-200ppm QUAT available in buckets to hold wiping cloths and in labelled spray bottles. Automated dispenser satisfactory.
-High temperature dishwasher achieved 73.9'C at the plate level after final rinse.
-General food storage practice satisfactory at this time.
-Back area satisfactory. No evidence of pest activity observed.

NOTE: One of the light bulbs in walk-in freezer requires replacement.

Renovation completed as per approved plan.Health Approval granted to operate.
