Found flour/ mix storage which had been dispensed into a rubbermaid bin - recommend keeping food product in bag. As used now, the bin must be washed, rinsed, sanitized after each empty.

Monitoring records inclusive of equipment temperatures, food cook temperatures, dishwasher, and sanitizers well maintained
Discussed proper method for temperature checking cooked proteins - stick the sensitive portion of the probe thermometer into the thickest part of the meat product to ensure doneness (74C)
