210 - Food not thawed in an acceptable manner [s. 14(2)] Observation (CORRECTED DURING INSPECTION): 8 jugs of frozen dessert product thawing in sinks at room temperature. Corrective Action(s): Staff moved jugs to walk-in cooler during inspection. Frozen foods are to be thawed safely in a cooler unit at 4 C OR in a clean sink under constant flowing cold water. To use the food preparation sink for thawing of frozen foods, a tube sink plug is to be provided where water can be allowed to flow continuously without causing overflow of the sink compartment. Violation Score: 5 306 - Food premises not maintained in a sanitary condition [s. 17(1)] Observation: Mouse droppings observed inside cabinet below front topping station cooler. Food splatters on wall above yogurt dispenser reservoirs. Ice build-up on floor of walk-in freezer. Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of food and debris from surfaces. Remove ice build-up from freezer. Violation Score: 3
