- The facility is maintained in a temperature controlled setting. The processing room measured at 34F. - Staff show good hygiene. Aprons and hair nets worn. - Handsink is maintained with hot & cold running water, liquid soap and paper towels - 200ppm QUAT sanitizer present at the 3 compartment sink, in sanitizer bucket with cloths and bucket with knives - Food contact surfaces are maintained in a sanitary manner - Coolers where finished products are stored are kept below 40F - Temperature monitoring done hourly - Adequate lighting provided with light covers - No signs of pest activity noted
