Observation: Rodent droppings noted in a few areas - behind cook steamer line, behind dishwasher, behind recycle/garbage bins in seating area.
Also chewed insulation around pipe behind dish washer. Continue cleaning, trapping & filling holes.

Observation: Holes/gaps noted in a fewareas should be filled/covered .
- stainless steel pony wall behind steamers has lots of holes, also loose steel panels. Seal holes and secure panels.
- store room #150 has numerous holes around pipes & ducts; fill. Also there is a gap between the cement wall and drywall by door, gap should be filled/covered with rodent proof materials.
- gaps under several doors noted; install door sweeps; use rodent proof sweeps.
- hole in wall behind/under fridge next to door between kitchen and old cafeteria service line.

Comments

- overall premise is quite clean & well -maintained. No food debris noted except around dishwasher; kitchen manager indicates that all food debris and standing water is removed before end of day. All food is in fridges or rodent-proof containers, so little is available for pests. Good!

Dishwasher reached 73 Degrees Celsius at plate level as per min/max thermometer. Good.

Hand sinks are stocked & working.

Fridges are all < 4 Degrees Celsius, well organized.
