Observation (CORRECTED DURING INSPECTION): Raw fish found to be stored on ice packs once again. CORRECTED DURING INSPECTION. Ice packs removed to storage.

Observation: The use of ice packs for cold storage of potentially hazardous food items is NOT permitted.

Corrective Action(s): If facility is found to use ice packs for storage of potentially hazardous food items progressive enforcement action will occur.
Facility should have purchased INSERT COOLERS for use during operation. Under counter coolers were approved during floorplan review process. Failure to provide adequate cold storage for use during operation will result in facility requiring alternative cold storage - INSERT COOLERS.

Ice packs were found on site today after much discussion during 1) initial inspection 2) routine inspection 3) follow up inspection.
EHO observed staff packing up ice packs and removing from facility

IF ICE PACKS ARE USED FOR COLD STORAGE FURTHER ENFORCEMENT ACTION WILL OCCUR.

Ice packs ARE NOT ACCEPTABLE for use as they can not maintain storage temperatures of less than or equal to 4 degrees Celsius. FHA SHOULD NOT have to conduct two follow up inspections to ensure facility is following Food Premises Regulations. Discuss with owner and all staff.
