Observation (CORRECTED DURING INSPECTION): Tongs used the previous night still had food debris.
Corrective Action(s): Ensure all equipment is cleaned on a night basis. Tongs were washed and sanitized at the time of inspection.

Observation: Walk-in cooler drip pan was found to be in poor sanitary condition. Facility cleans drip pan weekly.
Corrective Action(s): Cleaning frequency of the drip pan will need to be increased. Facility must be maintained in a clean and sanitary condition.

Observation: Staff member on-site did not have FOODSAFE Level 1 or equivalent training.
Corrective Action(s): In the absence of the operator, at least one staff member must have FODOSAFE Level 1 or equivalent training. Operator must training additional staff or schedule staff to ensure at least one FOODSAFE Level 1 or equivalent staff member is on-site during all hours of operation.

-Walk-in cooler was at 1C.
-Walk-in freezer was at -11C.
-Front display coolers ranged from 3C to 4C.
-Upright cooler was at 4C.
-Upright freezers were at -18C.
-Cooked chicken is made to order.
-Cleaning and sanitizing carried out in the 2-compartment sink. Sink plugs and bleach available.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer spray bottle labelled and tested at 100ppm.
-Saws and cutting table sanitized every 2 hours.
-Meat grinder was disassembled and found to be clean and sanitary.
-Washroom clean and well maintained. Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
