- Operator is processing primarily kale chips, crackers, granola and nut/seed based spreads. Operator also processes nut/seed based (dairy free) cheesecake and mousse.
- Nut/seed based spreads, cheeses and mousse are stored and sold in a frozen state. Product transported in portable freezer (battery powered)
- Nuts are rinsed prior to preparation of spreads and soaked (in water) in cooler if for extended period.
- Products are primarily sold at farmer's markets and beginning to sell at retail. Operator to consult with CFIA regarding labelling requirements.
- Days/time of operation: Tues and Wed 5am - 9am.
- Assigned to station #3 in the cold prep kitchen. Station, equipment, utensils and assigned food storage areas maintained in sanitary condition.
- Food protected from contamination.
- Walk-in cooler at 2C
- Product stored in upright reach in freezer. Temperature at -16C
- Quats sanitizer solution present in spray bottle at station
- High temperature dishwasher operational. Final rinse was 89.5C at dish surface.
