- sanitizer measured 100ppm chlorine - ensure any wiping cloths are stored in solution when not in use
- dishwasher reached 74C at final rinse cycle
- FOODSAFE requirements met
- general sanitation is satisfactory
- ensure foods are cooled from 60-20C in 2 hours or less and from 20-4C in 4 hours or less
- restart temperature and sanitizer monitoring logs
