Corrective Action(s): Clean and sanitize the aforementioned item. Can opener blade must be cleaned and sanitized after each-use.

Observation: Built-up of debris observed underneath the shelving units in the dry storage area and fan guard in the produce cooler.
Corrective Action(s): Clean and sanitize the aforementioned areas. Review facility's SAnitation Plan. Ensure daily cleaning and sanitizing of premises is conducted. Corrected by: October 8, 2022.

Observation: Front handwashing sink observed to be clogged.
Corrective Action(s): Service the handwashing sink to ensure it is not clogged to allow for proper hand hygiene. Temporary use the back handwashing sink to wash hands. Corrected by: July 12, 2022.

Comments

Routine Inspection conducted today.

Handwashing sink at the back kitchen area well equipped with hot and cold running water, liquid soap, and paper towels. Observed staff washing hands using the back handwashing sink as the front handwashing sink is clogged.
Chlorine sanitizer bucket at the front measured at 200ppm.
Walk-in cooler measured at 4C. Produce cooler at the back storage area measured at 4C. Walk-in freezer measured at -18C. Prep cooler closest to the till measured at 4C. Hot-holding units measured at 60C or higher.
3-compartment sink available for warewashing. 3rd compartment sink measured at 200ppm chlorine.
Meat cones undergo secondary cooking.
Exhaust hood next service date on Sept 30, 2022.

NOTE: Ensure weekly cleaning of exhaust hood vent is conducted to prevent build-up of grease. No food must be stored on the floor. All food must be stored at least 6 inches off the floor.

-Remove safe from walk-in cooler. No cash should be stored in walk-in cooler where food is stored.
