Comments

-Walk-in cooler was at 4C. Thermometer needs to be replaced - registered -2C.
-Both meat display coolers were at 4C.
-Chest freezer was at -11C.
-Upright freezer was at -15C.
-Cleaning and sanitizing carried out in 3-compartment sink. Bleach solution was tested at 100ppm to 200ppm.
-Operator stated a chicken order was made this morning and rotisserie was cleaned and sanitized at the time of inspection. Rotisserie racks much be cleaned at sanitized at the end of each night to prevent potential pest attraction.
-Handwash stations supplied with hot and cold running water, liquid hand soap, and cloth towel roll. Staff must ensure to advance the towel roll after using it to dry their hands to prevent potential recontamination of washed hands.
-Operator had a large supply of single use gloves on-site and discarded single use gloves were found in the staff washroom and cutting area waste bin.
-Bleach sanitizer pail prepared in roasting area and meat cutting area tested at 200ppm.
-Meat grinder, meat saw, and cutting surfaces sanitized at least every 2 hours.
-Foods stored off the floor and covered.
-General sanitation satisfactory at the time of inspection. Ensure staff pay more attention to the door slides for the display cooler. Some food debris and minor amounts of slime growth.
-No signs of pests noted at the time of inspection.
