Observation (CORRECTED DURING INSPECTION): Several foods found cooling on countertop with no time tracking. The following were discarded:
~ 3 lb teriyaki chicken breast. - 30*C
~ 2 lb chicken "nuggets (deep fried) - 20.4 *C.
- 3 gyoza, 22*C
Cool foods rapidly - move them to fridge as soon as they are cool enough to handle.

Observation (CORRECTED DURING INSPECTION): Glass doors were removed from sushi fridge.
- Prawns moved to another fridge.

Observation (CORRECTED DURING INSPECTION): Large bowl for making sushi rice was observed being hand washed and placed on floor to dry. No sanitizing.
1) Do not put clean dishes on the floor.
2) Always sanitize dishes after washing. Fill sink with bleach water and soak for 2 minutes.
