Observation (CORRECTED DURING INSPECTION): Operator failed to dilute 3rd compartment sink to at least 100-200ppm chlorine. Can opener blade observed to have built-up of food debris.
Corrective Action(s): Ensure 3rd compartment sink is sanitizing at 100-200ppm chlorine. Clean and sanitize the can opener blade after each-use.

Observation: Undercounter prep cooler furtherest the till measured at 11C air ambient temperature. Produce cooler near the back door measured at 7C air ambient temperature.
Corrective Action(s): Service the aforementioned coolers to hold an air ambient temperature of 4C or lower. Do not use the undercounter cooler at the front to hold potentially hazardous foods (e.g.: chopped vegetables) unless it is holding an air ambient temperature of 4C or lower. Corrected by: March 30, 2022.

Handwashing sink at the front and back kitchen area well equipped with hot and cold running water, liquid soap, and paper towels.
Chlorine sanitizer bucket at the front measured at 200ppm.
Walk-in cooler measured at 4C. Walk-in freezer measured at -18C. Prep cooler closest to the till measured at 4C. Hot-holding units measured at 60C or higher.
3-compartment sink available for warewashing.
Meat cones undergo secondary cooking.
Exhaust hood next service date on April 30, 2022.

NOTE: Replace all broken spray bottles. Ensure deep fryer is underneath exhaust hood.
