206 - Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Hot holding was less than 60C. Foods ranged from 42C to 55C. Operator has a thermometer available on-site and stated the foods are reheated once after two hours. Operator does not have records available on-site to verify proper hot holding of foods and reheating procedures. This is a continuing violation.
Corrective Action(s): Hot foods must be stored above 60C to prevent the growth of pathogens and or the formation of toxins. Foods can be stored between 4C to 60C for 2 hours if records are being kept to verify proper time/temperature controls. Foods were reheated at the time of inspection.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Manual vegetable slicer was found to have food debris behind the blade. This is a continuing violation.
Corrective Action(s): Equipment must be dissembled for cleaning and sanitizing after each use to prevent potential cross contamination. Blade was washed and sanitized at the time of inspection.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Handwash station was obstructed with containers. This is a continuing violation.
Corrective Action(s): Handwash station must be accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels to facilitate proper handwashing. Items were moved at the time of inspection.

Comments

-Follow-up inspection to April 20, 2022.
-Bleach sanitizer was available in the back kitchen and was tested at 200ppm.
-Did not observe foods stored in a garbage bag at the time of inspection.
-Food storage practices have improved - raw foods were stored below ready-to-eat foods at the time of inspection.
-Upright cooler was equipped with an accurate thermometer.
