Comments

General Comments:
Coolers are below 4 degC; foods in all the inserts are at or below 4 degC; butters/bacon have 2 hours time stamps.
Freezers are at -18 degC or less
Handsinks are fully equipped
Dishwasher rinse has 50ppm Chlorine.
Glasswasher in bar area is out of order. It needs to be fixed. Glasses are being washed in the main dishwasher until the glasswasher is fixed.
Temperature logs are being maintained
Tongs and other utensils are stored in ice. ENSURE THEY'RE WASHED/REPLACED EVERY 4 HOURS.
200ppm Quats available for sanitizing
Manager has FS level 1 certification
Ecolab pest control in on a monthly contract. Service reports are on-site.
