Observation (CORRECTED DURING INSPECTION): Chopped celery was stored in a bowl of water in the hand sink basin.
Corrective Action(s): Do not store anything inside the hand sink. This must be available for handwashing at all times.

Comments

General Observations:
Upright kitchen cooler temperature was 3 degC
Upright kitchen freezer temperature was -14 degC but foods in the freezer were frozen to the touch.
Hand sink was fully equipped.
200ppm chlorine was available for use in a spray bottle
Dishwasher rinse was 75 degC at the plate level
Discussed cooling of foods. Chef doesn't make a large volume of food so there aren't any leftovers to deal with after lunch. Any small amounts that are left over are discarded. Pasta is sometimes prepared in larger volumes so that some can be frozen.
Orkin pest control is on a monthly contract. Last two reports reviewed. No concerns noted.
The Chef had FS level 1 equivalent certification
