Comments

Handsinks were supplied with liquid soap, hot and cold running water, and single-use paper towels.
Staff were washing their hands properly.
Walk-in-cooler and refrigeration units (in use for storage of cold potentially hazardous food) were at or below 4 degrees C.
Two refrigeration units near the walk-in-cooler were unplugged and are used for dry storage only. A few bar coolers are for non-potentially hazardous food only.
Walk-in-freezer and other freezer temperatures were satisfactory.
Hot-held food was at or above 60 degrees C.
Probe thermometer was available on-site.
Other refrigeration units were equipped with thermometers.
Raw meat was stored separately from ready-to-eat food inside the walk-in-cooler.
Sink and surface cleaner from the dispenser and sanitizer pails had a concentration was within manufacturer's specifications.
Dishwasher final rinse chlorine sanitizer residual was at least 50 ppm (measured at 100 ppm) at the plate level.
Overhead sprayer was operational.
Manual ware-washing sink was supplied with hot and cold running water.
Prep. sink was operational.
Ice machine was in a clean condition.
No signs of recent pest activity were evident at the time of inspection.
