Observation (CORRECTED DURING INSPECTION):
The ice cream scoops are were being stored in dirty, luke warm water between use. Bacteria will grow in the luke warm water and contaminate the scoops.
Corrective Action(s):
Store ice cream scoops in a ice-water bath between use. Change the solution when the ice has melted, or when the solution is NOT clear, or at least every 2 hours. The cold water (temperature of a fridge) will prevent bacteria from multiplying fast. During the inspection, staff changed the storage of the scoops to an ice-water solution.

Observation (CORRECTED DURING INSPECTION):
The paper towel dispenser by the 3-compartment dishwashing sink was empty. Staff can NOT properly dry their hands.
Corrective Action(s):
During the inspection, staff placed paper towel at the hand sink.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
Food debris and old mice droppings found along the base of some walls. This will attract or encourage the persistence of the mice. Old droppings leave a scent which attract more mice.
Corrective Action(s):
Thoroughly clean the floors along the base of all walls to remove food debris and old mice droppings. This shall be done daily until the mice are eliminated.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers were -19C or colder; hot holding units above 60C; thermometers present; and temperatures recorded daily.
- High temperature dishwasher had a rinse cycle temperature of 75.9C at the plate's surface as per max/min thermometer.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer had a strength of 200ppm.
- All foods stored in food grade containers; covered; labeled; date coded; foods stored in groups with raw proteins separate or below RTE foods; and food stored 6" off the floor on shelves, racks or platforms.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is satisfactory. The exhaust canopy was cleaned in January 2020. The ceiling tiles have accumulated dust, but are scheduled to be cleaned this week. Improvement needed in the mentioned areas.
- A minor mice issue is being dealt with, since construction of the nearby community centre started pile driving. Snap traps and catch-all-traps are in use.
- FoodSafe certified staff present.
