Observation (CORRECTED DURING INSPECTION): Whole pre-cooked and cooked duck observed in the Walk-in cooler (approximately 20 whole ducks) -temeprature at 21 deg C and operator indicates the ducks were cooked over 3 hours ago. Operator indicates the whole ducks were cooked then placed in the cooler

Improper cooling -operator is not following the approved Food Safety Plan for Deep Fried Marinated Duck and Beijing Duck
Corrective Action(s): All 20 whole ducks discarded

As per the approved Food Safety Plans:

Step 1: 60 deg C to 20 deg C within 2 hours:
-Deep Fried Marinated Ducks are to be chopped in half placed into an individual bag then placed in an ice bath for 1 hour
-Beijing Duck is placed in bag then placed in the ice water for an 1 hour

Step 2: 20 deg C to 4 deg C within 4 hours:
transferred to fridge

Operator to fill-out the Cooling Chart provided to ensure the temperture gradient is followed
Operator to translate the Food Safety Plans to mandarin and submit to facilitate for workers

Operator is to suspend the sale of the Marinated and Beijing Duck until all items are corrected

Corrective Action(s): Discarded all the contents of the fridge -fish, pork, vegetable salad
