Under counter cooler at near end of cook prep line dirty in and around.
Corrective Action(s): Tighten up the cleaning below this station. Move and clean the above cooler inside and out.

Comments

Quats audit performed while Ecolab technician present. Noted inconsistent results of test strip readings. Hydrion QT 40 strips very temperature dependent. Also, use of sani-buckets with cloth immersed in solution will quickly (1 hour or so) impact residuals. Ecolab test strips used on premises and are foam/temperature neutral. Ecolab changed "tip" (clogged) during inspection at mop sink dispensing unit.
**Recommendations include keeping cloth out of bucket between use and change when dirty OR change solution hourly (fill buckets less).
***Also recommend serving station more regularly change sani-bucket in this area.
Cooling units and temps all good. Less than 4 C.
Hot holding above 60 C.
Dishwasher above 50 ppm chlorine (dish pit continues to be maintained very well).
Glasswasher at 12.5 ppm iodine
handwash stations all stocked.
Walk-in cooler/freezer, back area, storage room and main cook line much improved cleanliness. Noted and thank you.
