dishwasher rinse cycle temp at 72C but gauge should read 82C. Inspection conducted after lunch rush and dishwasher was being used a lot which leads me to believe hot water tank might not be able to handle that amount of volume in a short period. follow up to be conducted tomorrow as operator has called tech to look at dishwasher. In the mean time all dishes will be manually sanitized in 2 large compartment sinks with a bleach solution. no other concerns at this time.
