Observation: > 2 trays of portioned ground meat and 1 bucket of pickled veg stored in walk-in cooler but not covered.
> 1 metal insert of raw meat stored next to insert of cooked food items in top drawer cooler.
Corrective Action(s): > All food that is not for immediate use must be covered and protected from contamination.
> Raw foods must be stored below and away from cooked and ready to eat (RTE) food items.

Observation: Dry storage room is cluttered, items stored on the floor and in front of the door.
Corrective Action(s): Reorganize this room so that all food items (except for pest proof bins) are at least 15cm off the floor. Decluttering will help to prevent the harbouring of pests, keeping items off the floor will help with cleaning.

Observation: > Dry goods spilled on the floor in dry storage room.
> Vent hood baffles are significantly soiled. Operator has already called for professional cleaning this month.
Corrective Action(s): Clean and sanitize all areas of the premise as per your sanitation plan.
> Vent hood baffles can be removed and should be cleaned and sanitized weekly in addition to professional cleaning.

Temperatures are not recorded. Considering the history of cooler issues, temperature logs are highly recommended.

**Note: handsink in the middle of cook line is missing its designated towel dispense but facility has made a temporary dispense at the end of the cook line until new part arrives.
> High temperature dishwasher achieved final rinse temperature of at least 71C (as per thermolabel).
> 100-200ppm chlorine solution available for sanitizing. Wiping cloths are submerged in sanitizer buckets.
> Meat slicer in sanitary condition.
> Ice machine in sanitary condition, scoop stored in separate container.
> No obvious signs of pests at time of inspection.

> Health permit posted.

Updated floor plans that were required as a result of renovations were received by FHA in August 2021.
