- Food Safety Plan & Sanitation Plan - keep on site.
- Coolers are keeping food at 4 C or cooler - good.
- No hot holding.
- Fish is from approved source, frozen, and defrosted in cooler at 4 C.
- Hand washing sink in kitchen has hot/cold water, liquid soap and paper towels in dispenser.
- Filters (above cooking equipment) - are scheduled to be cleaned. Grease waste is recycled.
- Wiping cloths are stored in a chlorine sanitizing solution (200ppm chlorine detected).
- Commercial dishwasher - final hot water rinse is >160F measured inside of the machine & >180F on gauge - good.
