Observation (CORRECTED DURING INSPECTION): Food debris observed on knife stored in clean holder of the unused sandwich prep station.
Corrective action: Clean and sanitize the knife.
Rationale: Utensils need to be stored in a sanitary manner to avoid introducing bacteria to the food when in-use because contaminated food can lead to foodborne illness.

Observation (CORRECTED DURING INSPECTION): QUAT: Sanitizer buckets observed to be murky in clarity.
Corrective action: Replace all QUATs sanitizer buckets with new solution. Ensure that the QUATs sanitizer has a concentration of 200ppm or as per manufacturer's specification.
Rationale: The Quats sanitizer solution should be clear to properly sanitize and avoid introducing contaminants to food contact surfaces, which can reduce the incidence of foodborne illness.

Observation (CORRECTED DURING INSPECTION): 1. Boxes of food stored directly on the floor in the walk-in freezer
2. Two unwrapped baked food items observed to be directly on the floor in the walk-in freezer.
Corrective action:
1. Ensure all food items area stored at least 6 inches off the floor.
2. Dispose of the two frozen baked items.
Rationale: Food needs to be stored off the floor to avoid access by pests and contamination by spills and bacteria on the floor.

Observation: 1. Seal of the handsink basin by the drive-through counter observed to be leaky water.
2. Leaking water due to crack observed on the faucet of the mop sink.
Corrective action: Contact a plumber to fix the following: seal of the handsink by drive-through, crack on the mop sink faucet.
Rationale: Leaky and pooling water due to malfunctioning equipment can attract pests, which can contaminate food and lead to foodborne illness.

General comments observed during inspection:

1. Temperature
-All coolers maintained at 4C or lower.
-Temperature records in use and updated every 4 hours.
-Hot liquids (eg. soups) measured at 65C.
-Hot held items (eg. potato wedges) time-stamped and discarded after 1.5 hours.

2. Sanitation
-All handsinks equipped with hot/cold running water, liquid soap and paper towel.
-High temperature dishwasher sanitizing at 76.6C at utensil surface.
-Ice machine and ice box maintained in sanitary condition. Ice scoop stored in designated container.
-Dairy dispenser nozzles cleaned and sanitized every 4 hours.
-QUATS dispenser line measured at 200ppm.
-Tongs for eggs cleaned and sanitized after each use.

3. Food storage
-No raw foods stored above ready to eat foods.
-Date of preparation marked on food items in walk-in cooler.
-Shatterproof light covers visible.

4. Pest control
-No pest activity detected. Pest control company services the premises monthly.

5. Administrative
-One staff on-site with valid and current Foodsafe Level 1 or equivalent training (expires in Nov 14, 2024)
