Observation: During inspection, it was noticed that the facility has updated their food menu with additional food products. Prep cooler and hot holding units have been added to the facility operation. However, no Food Safety or Sanitation Plan was provided to Fraser Health prior to making these changes.
Corrective Action(s): Please submit the updated Food menu, Food Safety and Sanitation Plan as well as updated Floor plan (if structural changes have been made) to the district EHO.

Comments

Routine inspection conducted at the food facility and the following observations were made during the inspection:

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Display coolers measured at 4C or less.
- Walk in cooler at 2C
- Walk-in freezer at -19C
- Front freezer at -18C
- Food in hot holding units at 60C or above
- Prep cooler at 4C
- Temperature logs were maintained and found up-to-date.

Note - Prep cooler and hot holding units are the new addition to the facility operation. See violation above.

Storage:
- All food items were stored at least 6" off the floor.
- All food products were found either in original packaging or covered inside coolers.
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer pail available and the concentration of bleach noted at 200ppm.
- 3-compartment sink available for dishwashing. 200ppm chlorine residual measured in 3rd sink.
- Utensils and tongs were found in sanitary condition.
- Vents, equipment, band saw and meat grinder maintained in good sanitary condition.

Pest Management:
- No visible signs of pest activity observed at the time of inspection.

Administrative:
- Operating permit was posted in a conspicuous location.
- Staff has valid FoodSafe Level 1 certificate.

Note: Non-critical violations noted during previous routine inspection (report #TGIL-C9CQP7) have been addressed.
