Comments

Handsinks were adequately supplied with liquid soap, hot and cold running water, and paper towels.
Dishwasher final rinse chlorine residual was 100 ppm at the plate (minimal 50 ppm required).
200 ppm QUATS sanitizer was available from the dispenser, inside a spray bottle, and container with a wiping cloth.
Ice machine was in a clean condition and the scoop was stored separately.
Walk-in-cooler and other coolers were at or below 4 degrees C.
Refrigeration units were equipped with thermometers.
Freezer temperatures were satisfactory.
No hot-holding was being conducted at the time of inspection.
No signs of recent pest activity were observed at the time of inspection.

Specific comments: Audited food products included the following: Canola oil (0% trans fat), Brownies (1.4% trans fat content of total fat), Baguette, Bread, and Breaded chicken strips.

NOTE: Manager checked some products used for special orders in the computer from GFS (key lime pie and apple tarts) that exceeded the 5% trans fat requirement. Do not serve any products that do not comply with the Public Health Impediments Regulation. The mandated requirements under the Public Health Impediments Regulation were reviewed with the Managers at the time of inspection.
Food exempt from the regulation includes:
  • Pre-packaged food with a Nutrition Facts table sold directly to the consumer without alteration
  • Food with the sole source(s) as naturally occurring trans fat (i.e. beef, sheep, lamb, bison and dairy products)
  • Employee lunches not purchased from the food service establishment
