* Clean food debris from under the air vent grilles in all deli coolers and other display coolers ( By January 10, 2019) Consider means to prevent food debris from falling through the grills. * The return air grills for cold air in the island display cooler are rusted. Remove all rust and repaint with cooler grade mildew- resistant paint. Consider replacing the grills if not possible to paint them. ( By January 20, 2019). Walk-in cooler: 2 degrees C Walk-in freezer below -18 C. Sandwich preparation cooler below 4 C. All deli display coolers below 4 C. Sushi display cooler < 4 C. Island cheese display cooler < 4 C. Hot holding of chickens, potato wedges and soups > 60 C. Dishwasher final rinse: 74 C at the plate surface. Quats sanitizer in the third sink and in spray bottles tested 200 ppm. Liquid soap and paper towels available at the hand sinks. Temperature logs are up to date. General sanitation is satisfactory.
