Discussed cooling procedures - operator has prepared a sign to post on wall that outlines steps of cooling. Operator is to update sign to include a step for checking the temperature with a probe thermometer at roughly the 1.5 hour mark and 2.5-3 hour mark.

Cooling procedure includes transferring hot foods into shallow metal pans

Ensure the cooling wand used is intended for that purpose - Plastic must be able to withstand the heat otherwise, we risk chemicals from the plastic leaching into foods.

Discussed sanitizer - ensure a spray bottle at 100ppm Cl is readily available at all times.
