Observation (CORRECTED DURING INSPECTION): In under counter cooler by drive thru window, ambient air temperature registered 11C. Probed chipolte sauce, temperature registered to be 10C.
Corrective Action(s): Discarded punctured chipotle and Mayo sauce containers. Ensure all refrigerate after opening products are kept at 4C or less after opened.

Corrective Action(s): Ensure premise is cleaned thoroughly on a routine basis. Focus cleaning efforts in more to reach areas behind and underneath kitchen.
NOTE- 16 machine currently not in use. Clean standing water in area. Accumulation of food debris and standing water can attract pests. Date to be corrected by 1 Week.

NOTE: - Monitor freezer temperatures to ensure at or below -18C.
All not holding at or above 60C.
Prep cooler inserts at or below 4C, under counter cooler also at or below 4C.
Quatz sanitizer at 200ppm. Wiping clothes stored in solution when not in use. - good.
Hand wash sinks equipped with hot/cold water, paper towel & liquid soap.
3 compartment sink available for dishwashing.
