Observation: Samosas in Hot holding unit measured at 35.4C. Food must be hot held at or above 60C. Samosas were stored in the unit more than 2hours. Samosas were discarded at the time of inspection.
Correction: To continue using the hot holding unit: Ensure to obtain proper thermometer to check food temperature properly. Ensuure to heat up the Samosas to or above 74C then hot hold at or above 60C. Check the food temperature twice daily.
