Observation (CORRECTED DURING INSPECTION): 1. Glasswasher tested at 0ppm Iodine
2. Ice machine including white sheild requires a thorough cleaning and sanitizing
Corrective Action(s): 1. Have glasswasher serviced to ensure it can consistently maintain a 12.5ppm - 25ppm Iodine residual.

In the interim, all glass ware will be washed and sanitized in the dishwasher. Dishwasher maintaining 50ppm Cl residual at time of inspection.

Ensure you have Iodine test strips so you can test the unit yourself. Should test on a daily basis.

2. Observed cans of pesticides downstairs on a shelf above potatoes and onions
Corrective Action(s): 1. Ensure knives are NOT stored inbetween equipment
2. Relocate pesticides away from food storage. Should only be in chemical storage area.

Observation: Deep cleaning and sanitizing required in the following areas:
Corrective Action(s): - Dishwasher, interior & exterior to remove calcium buildup
- Cooler fan covers in both walk-ins.

- Underneath and behind cooking equipment/deep fryers
- walls, floors, counters, etc. to remove grease build-up

Be sure to use a heavy duty degreaser on floors and walls

Organizing and cleaning also required in downstairs storage area
