-Overall premises and equipment maintained in a sanitary condition.
-All handsinks in kitchen and washrooms supplied with hot and cold running water, liquid soap and paper towel.
-Walk-in cooler was at 1C
-Walk-in freezer was at -18C
-Reach-in freezers at -11C and -14C
-Cooler and freezer ambient temperature are monitored via data logger with text alert to Operator when temperature exceeds limit.
-High temperature dishwasher met sanitizing temperature requirement. Final rinse temperature was 82C. Wash and rinse temperature checked daily via external gauges.
-Quats sanitizer (200ppm) present from dispenser at 2 compartment pot sink and in mop sink area. Quats sanitizer (200ppm) present in spray bottles (labelled to indicate contents) for use on stations. -Spray bottles are being filled by YVR Prep to ensure correct products are in spray bottles. Test strips present to verify concentration. Tenants have been notified to obtain their own test strips as well to verify concentration of sanitizer prior to use.
-Ice machine appears clean and maintained. Scoop stored outside of the ice basin in clean container
-No signs of pest issues at the time of the inspection with the exception of some fruit flies noted which Operator is addressing. Pest Control contract in place with monthly service. Catch traps present for mice and 2 fly lights have been installed. Service report from 18-Jul-2018 provided.
-Commissary kitchen is operating with 16 stations (11 in hot kitchen, 5 in cold) and a baker's area and a separate raw meat preparation area. Plans were submitted to reflect the change in layout.
-Schedule of station usage has been supplied by Operator to EHO via google doc.
-Contract provided by Operator to EHO when new applicant/tenant is proposing to use a station.
-Operators of YVR Prep are preparing chicken stock and supplying to restaurants within the lower mainland. Sandwiches will also be prepared and supplied pre-packaged to local brewery (Dageraad). -Food safety procedures have been updated to reflect the preparation of chicken stock and sandwiches. Both products are transported cold in cambro units. Ensure products are suitably labelled and dated.
*Operator reported floor will be touched up in some areas where there are minor signs of wear. Coving at back bay door to be re-affixed.
*Reminder to keep floor area clear in all areas to facilitate cleaning and monitoring for pests.
