Observation (CORRECTED DURING INSPECTION): Insert of soup on the grill was at 50C.
Corrective Action(s): Hot potentially hazardous foods must be maintained at or above 60C to prevent the growth of pathogens and or the formation of toxins. Soup was reheated to 74C and placed on the grill at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Egg slicer was found to have food debris from previous use.
Corrective Action(s): Ensure all equipment is properly washed and sanitized. Slicer was placed in presoak solution at the time of inspection for washing and sanitizing.

Observation (CORRECTED DURING INSPECTION): Employee observed sweeping floor, followed by handling dishware from the dishwasher, without washing hands.
Corrective Action(s): Employees must adhere to good hand hygiene practices to prevent potential contamination of foods and equipment. Review hand hygiene practices with all staff.

-Walk-in cooler was at 3C.
-Walk-in freezer was at -18C.
-Prep coolers were at 4C (top and bottom).
-Upright freezer was at -12C.
-Hot potentially foods (gravy and soup) were cooled in an ice bath at the time of inspection.
-Chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface (minimum 50ppm required for proper sanitizing).
-Glass washer final rinse of 12.5ppm iodine on the glass surface (minimum 12.5ppm required for proper sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Ice machine clean and well maintained. Ice scoop stored in a sanitary manner.
-General food storage practices good at the time of inspection. Foods stored off the floor and covered. raw meats stored below ready-to-eat foods.
-General sanitation good at the time of inspection.
-Facility serviced by a professional pest control operator on a monthly basis. No signs of pests noted at the time of inspection.
-Washroom clean and well maintained.
