Cooler at 4 C or lower; freezer at -18 C or lower
tongs, scoops and funnels are cleaned and sanitized regularly via dishwasher; dishwasher in good working order, detected 71.9 C at plate level after final rinse cycle
Manual dishwashing performed for utensils that do not fit in the dishwasher; QUAT sanitizer being used at 200-400 ppm
Oil dispenser is not refilled but replaced with a cleaned and sanitized container once the existing ones have emptied
Cracks on counter sealed properly; all wood sealed properly
Will notify inspector when bringing in prep table, walk-in cooler and other setups
