Observation (CORRECTED DURING INSPECTION): Sanitizer not in use on food contact surfaces or during dishwashing procedure.
Corrective Action(s): Ensure sanitizer is always prepared for sanitizing food contact surfaces.

When dishwashing, follow the manual dishwashing method as posted on the wall.
1. Wash with soap & water in 1st compartment of sink
2. Rinse off soap in 2nd compartment of sink
3. Fill the 3rd compartment of the sink with a 100ppm Cl solution (1 tbsp bleach for 4L water) and fully submergedishes for a 2 minute soak.
4. Air Dry.

Ice machine requires a thorough cleaning and sanitizing

Turn off the ice machine, empty the basin and wash the basin with soap & water and then sanitize w/ 100ppm Cl (1 tbsp bleach for 4L water)

Observation: Observed hot dogs thawing at room temperature
Corrective Action(s): Thawing may only occur under cold running water or in a cooler at 4C or below.

Hot dogs were still frozen at time of inspection and were moved into the walk-in cooler.
