Observation: A few floor tiles were partly broken in the dishwashing area and were accumulating water. Food and Nutrition Services Manager mentioned that they have placed an order for the repairs.
Corrective Action(s): Repair/replace the broken floor tiles so that they are maintained in a smooth condition and are intact; Correct within 2 months.

Comments

Handsinks were supplied with liquid soap, hot and cold running water, and paper towels.
Prep. sinks were operational.
2-compartment sinks and 3-compartment sink were in good working order.
200 ppm QUATS sanitizer was available in spray bottles and from the dispenser.
Pot wash dishwasher was at 74 degrees C (71 degrees C or hotter) at the plate. This dishwasher is also used for washing and sanitizing cutlery after it has been washed through the other dishwasher.
Dishwasher for plates/cutlery was at 72 degrees C (71 degrees C or hotter) at the plate.
Dishwasher for service tray was at 72 degrees C (71 degrees C or hotter) at the plate.
Dishwasher final rinse gauges were in good working order.

Walk-in-coolers and other coolers were at or below 4 degrees C.
Walk-in-freezers and other freezers were at or below -18 degrees C.
Refrigeration units were equipped with thermometers.
Temperature logs were in place.
Probed food inside a walk-in-cooler was at or below 4 degrees C.
Adequate thawing was observed inside refrigeration units.
Meal replacements were dated (date packaged and date to discard by). Food and Nutrition Services Manager stated that expiration dates are checked prior to packaging them and these meal replacements are served prior to the expiration date.
No cooking of food is done on-site. Pre-cooked food from the suppliers is however reheated on-site prior to serving.
Food products were stored on shelving units off the floor in refrigeration units and the dry storage areas.

No signs of recent pest activity were observed at the time of inspection.
Ice machine was in a clean condition and scoop was stored separately. Note: Ice is not used as an ingredient in beverages or food according to the Food and Nutrition Services Manager.
Food and equipment storage areas were in a clean condition.

Food & Nutrition Services Manager had a FOODSAFE Level 1 certificate valid until March 16, 2023.
